Easy Vegan Foods for Kids!
In our hopes of helping you get your kiddies on some vegan options in their meals, we've been trying a variety of recipes we make for ourselves as we too are making a transition into more vegan. gluten free and vegetarian options. So we gathered some of our favs & these really easy recipes are delicious and you can have your kids help you make them! Turning meal time to family time while helping shape them with some culinary fun!

Baked Fries with Rosemary & Sea Salt
A great replacement for nugget night!
4 Medium Potatoes, any variety works
1 1/2 tbsp (20 ml) olive oil
2-3 sprigs of rosemary
Salt and pepper
Preheat oven to 400F (204c). Line a baking sheet with parchment paper. Set aside.
Scrub and rinse the potatoes well. Cut into wedges. Mine usually end up a mix of wedges and thick fries. Uniformity of thickness is the important part.
Toss the potatoes, olive oil, rosemary and salt and pepper in a large bowl. Pour out onto the baking sheet. If the fries are too crowded, use a second baking sheet. Overcrowding causes them to steam instead of crisp up, and one likes that.
Bake for about 40 minutes or until desired crispness, turning about halfway through. Serve with optional dipping sauce of choice!
Healthy Shopping On a Budget
When I first started to journey into the vegetarian and vegan side of life, I realized right off it can be a little expensive, especially if you don't consume most of the fresh items quickly enough. While on my shopping trips, I realized I had been buying to much for a too long of a period of time. I was still shopping as though I was feeding a family of 5 for a months worth of time! Crazy! I began to adjust not only what I was buying but also for how long. So instead of buying 4-5 packages of pasta, I now only buy 2-3, which will actually last me anywhere from 3-4 weeks because I don't eat pasta as often I once did. And because the portions are smaller, I can actually eat from the same package multiple times throughout the month. Caching! I heard the savings happening already! So here are my personal tips for when you're trying to shift to a more healthier way of feeding yourself or your family.
1. ALWAYS have your list with you!! It was a great help for me to have created my list at home as opposed to guessing what I needed. I made a lot of poor choices doing that and spent unnecessarily. So take a few minutes to scan your fridge and food pantry to see exactly what it is you need.
2. EAT before you go shopping!! Have you heard the saying "Don't eat with your eyes"? It's REAL and happens often to us when we are hungry. I mean what else is going to happen when we walk into an environment that is targeting us with all the sugary and quick fixes of heavily processed food? We're going to buy it ALL! Or at least make a few poor decisions there as well. Or even worse, we crack open a bag of chips and start the muncha-thon as we shop! (I now go for a handful of grapes if I forget to eat before shopping).
